Pork tenderloin firstly need to be marinated, and then cook the pork on the grill and served with salad of vegetables and avocados.
Ingredients
Pork tenderloin (cutting slices 2 cm thick) – 2 pcs. (400 g each)
Red onion (fine-cut) – 1/2 cup
Lime juice – 1/2 cup
Chili pepper (chopped) – 1/4 cup
Olive oil – 2 tbsp
Cumin (cumin) powder – 4 tsp
For the salad
Avocado medium size (cutting cubes) – 2 pcs
Tomatoes cream (sliced into cubes) – 2 pcs
Cucumber small (shelled and cut into cubes) – 1 pcs
Green onions (chopped) – 2 pcs
Fresh cilantro (chopped) – 2 tbsp
Liquid honey – 1 tbsp
Salt – 1/4 tsp
Black pepper – 1/4 tsp
Jelly of chili peppers – 3 tbsp
How to cook
1. In a small bowl, mix red onion, lime juice, chili pepper, olive oil and cumin. In a large plastic bag with buckles pour 1/2 cup of the resulting marinade, and also put the sliced pork tenderloin. Close package and mix well its contents. Put the bag with the meat in the refrigerator for 2 hours. From the remaining marinade take another 1/3 cup, cover and set aside. Pour the remaining marinade in a large bowl, add avocado, tomatoes, cucumber, green onions, cilantro, honey, salt and pepper, stir, cover and place in refrigerator to cool.
2. In a small saucepan, mix the reserved marinade (1/3 cup) and chilly and pepper jelly. Cook on a medium heat, stirring, for about 2 minutes.
3. Preheat the grill. Put pork tenderloin (with marinade) on the grill, cook it, uncovered, about 4-6 minutes on each side, lubricating with the marinade.
Serve the pork tenderloin with a salad of avocado and tomatoes.
