This Will Make You Light Up Your Grill!

If you are looking for new recipes to light up your grill (or Your Smoker) this summer then this is one you have to try.  Bacon, Meatballs, Onion???  Wow these are the Bomb!  You will love them and so will your friends.  So if you are looking for a weekend treat or something to entertain your guests who are coming for dinner tonight, grab this recipe and get to grilling!

Ingredients:

  • 2 yellow onions
  • 1 lb. ground beef
  • 1/4 cup onions, diced
  • 1/4 cup parsley, chopped
  • 1/4 cup mushrooms, chopped
  • 1 Tbsp. brown sugar
  • 1 Tbsp. spicy ketchup
  • 1 tsp. soy sauce
  • 1 tsp. worcestershire sauce
  • 1/4 cup Panko bread crumbs
  • 1 pack of bacon
  • 1 bottle of BBQ sauce

Directions:

To start making these tasty BBQ meatball onion bombs, preheat your grill to about 400-450 degrees.  Don’t have a grill thermometer?  Get your grill going and nice and hot, but you want to cook these for about 40-45 minutes without burning them up, so get a nice even heat you can cook low and slow with the lid on using indirect heat (not directly on flame or over coals).

Cut off the tops and bottoms of the onions and remove the exterior skin. Cut the onion in half and peel the layers apart, keeping the biggest layers to stuff with meat.

Setting the onion layers aside, mix the ground beef, diced onion, parsley, mushroom, brown sugar, condiments, and bread crumbs in a large mixing bowl by hand.

Place a handful of the meatloaf mixture inside two of the onion layer pieces.

Wrap the onion meatballs in bacon, using three slices per ball. Secure the bacon with toothpicks to keep it from unraveling during cooking.

Grill low and slow for 40-45 minutes rolling once every 10 minutes or so.  Grill using indirect heat and do not grill them directly over the coals or heat source or the bacon will get too crispy too fast.  We always use our #1 Rated Weber Performer Grill since it makes it so easy to grill indirectly and effectively each and every time we make these.  You can bake these in the oven as well if you want to make sure you get a really even cook through, but grilling really brings out the flavor in these Bombs!

*Note:  We just tested these using our Smoker and I have to say they are even better smoked!  225 degrees for 1 hour is all you need for perfection and the best Bacon Onion Bombs ever! We recommend using Hickory for the best flavor as well.
